Strawberry Chia Jam

Strawberry chia jam is really simple to make and a good way to use up a glut of strawberries. When they are cheap in the supermarket, you can buy in bulk and make some of this jam. It keeps for about a week in the fridge it or it is also suitable for freezing to use later.

The texture is beautiful and you get the benefits of chia seeds such as omega 3’s and fibre, while having a sweet treat.

Ingredients

  • 2 cups of strawberries

  • 2 heaped tablespoons chia seeds

  • 1 tablespoon maple syrup

Method

  1. Blitz the ingredients in a good processor.

  2. Put in a pot on a stove and heat gently for about 15 minutes to thicken.

  3. Store in a glass jar in the fridge. It will keep for about 7 days.

It is suitable for freezing if you make a big batch.
